kezdet.
Szó szoros
értelemben véve egy héttel ezelőtt, amikor valóban szembesültem a rebarbara
látványával és ízével. Múlt hét csütörtökig csak egy bolti epres-rebarbarás
lekvár alapján „ismertem”.
A róla való
izgalmas kutatásaim összegezve:
- Marco
Polo által a XIII. században jelent meg Európában, ám amilyen gyorsan jött,
olyan gyorsan távozott is, ugyanis mérgező levelei miatt sokan kimúltak.
- Az 1700-as években újra, már leveleitől megfosztva fogyasztották, számos típusának
levélnyeleit gyógynövényként tartották számon. A XIX. századbeli Angliában
egyes családok már rebarbara termelőként éltek.
· - A
XX. század közepétől a zöldséget inkább gyümölcsként értelmezték.
Én a klasszikus,
talán legalapvetőbb receptjét, az epres-rebarbarás ropogós morzsát készítettem
el.
Bár sütéskor a
benne lévő B1, B2, A és C vitaminok többsége elvész, a nemes ásványi anyagok: a
kálcium, a kálium, a foszfor és a magnézium megmarad. A magas antioxidáns tartalmú nassolnivaló
savtermelő, így én keksszel fogyasztottam.
Ha esetleg kertet
tervezel, mint én :), ajánlatos bevenni a buliba, hiszen a vetésforgó nem
érinti, valamint sok törődést sem igényel. Benne van az X faktor!
Hozzávalók 4
személyre, egy piteformára
- · 280 g rebarbara, 5cm-es darabokra vágva
- · 300 g eper
- · 1 ek (evőkanál) liszt
- · 300 g cukor
a tetejére
- · 180 g müzli
- · 15 g liszt
- · 30 g cukor
- · 60 g hideg, kockázott vaj
a tálaláshoz
- · keksz vagy joghurt
A
rebarbarát megtisztítjuk. Elválasztjuk leveleitől, a szár külső rétegeit
lehúzzuk. 5 cm-es darabokra vágjuk, majd az eperrel tűzálló tálba tesszük.
Megszórjuk a liszttel és a cukorral, majd a 200°C-ra előmelegített sütőben 10
percre betesszük. A sütőből kivéve kb. 1 dl levet lekanalazunk róla.
Egy
tálban összekeverjük a müzlit, a lisztet és a cukrot majd hozzáadjuk a felkockázott
vajat. Ujjaink között elmorzsoljuk.
A
gyümölcsökre szórva 30 percre visszatesszük a sütőbe.

Literally a week ago when I had a real encounter with the sight and taste of rhubarb. Up until last Thursday I have only "known" it through a strawberry-rhubarb jam from the store. My exciting research about it in a nutshell:
- It appeared in Europe in the 13th century through Marco Polo, but as fast as it did, it disappeared just as fast because many had passed away because of its poisonous leaves.
- It was consumed again in the 17 hundreds, this time without its leaves. Many of the sticks of rhubarb types were known as a healing herb. In the 19th century, some families in England were already living as rhubarb growers.
- From the middle of the 20th century this vegetable was kept in the records as more of a fruit.
I prepared the classic, probably the most basic recipe of it: the strawberry-rhubarb crunchy crumbs.
Although the B1, B2, A and C vitamins will be gone of it through baking, the precious minerals: calcium, potassium, phosphor and magnesium will stay. This high anti-oxidant containing snack produces SAV, so I ate it with biscuits.
If you are planning a garden like me , I suggest that you consider making it a part of your party because it is not affected by crop rotation and it does not require a lot of caring. It has the X-factor in it!

Ingredients
for 4 for a pieform
- 280 g rhubarb, cut into 5 cm pieces
- 300 g strawberry
- 1 tbsp (tablespoon) flour
- 300 g sugar
for the top of it
- 80 g muesli (granola)
- 15 g flour
- 30 g sugar
- 60 g diced cold butter
- biscuit or yoghurtClean rhubarb. Separate from leaves, pull off outer layers of stem. Cut into 5 cm pieces and put it in a heat resistant bowl with the strawberries. Sprinkle with the flour and the sugar and then place into oven for 10 minutes at 200°C. After taking it out of oven, remove about 1 dl of the excess liquid from it. Mix the muesli, flour and sugar in a bowl, then add the cubes of butter. Use your fingers to crumble over the top.After pouring this on the fruit, place back into oven for another 30 minutes.

Buchstäblich
von einer Woche, als ich mit dem Anblick und Geschmack des Rhabarbers
konfrontiert war. Bis letzten Donnerstag "kannte" ich ihn nur durch
eine Erdbeer-Rhabarber Konfitüre aus dem Laden.
Meine
spannende Forschungen über ihn zusammengefasst:
- Er
erschien in Europa im 13. Jahrhundert durch Marco Polo, aber wie schnell er
kam, genauso schnell hat er sich auch entfernt, weil wegen seinen giftigen
Blättern viele gestorben sind.
- In
den 1700er Jahren wurde er wieder, aber dieses Mal ohne seine Blätter
konsumiert, viele Arte seiner Blattstielen wurden als Heilkraut betrachtet.
Während des 19. Jahrhunderts lebten zahlreiche Familien in England schon als
Rhabarber Hersteller.
- Von
der Mitte des 20. Jahrhunderts hat man diese Gemüse eher als Obst
interpretiert.
Ich
habe das klassische, vielleicht das grundsätzlichste Rezept mit ihm zubereitet,
die Erdbeer-Rhabarber knusprige Streusel.
Obwohl
von den enthaltenen Vitaminen B1, B2, A und C die meisten davon beim Backen
verloren gehen, die edle Mineralien: das Kalzium, das Kalium, das Phosphor und
das Magnesium bleiben. Diese hoch antioxidantien enthaltenes Naschzeug
produziert Acid, so habe ich es mit Plätzchen gegessen.
Wenn
du eventuell einen Garten planst, wie ich :), es ist ratsam ihn in die
"Party" einbeziehen, weil die Saatfolge ihn nicht betrifft und
fordert keine großartige Pflege. Er hat den X-factor in sich!
- 280 g Rhabarber in 5 cm Stücke geschnitten
- 300 g Erdbeer
- 1 EL (Esslöffel) Mehl
- 300 g Zucker
- 180 g Müsli
- 15 g Mehl
- 30 g Zucker
- 60 g Butter kalt, in Würfel
- Plätzchen oder Joghurt
Das Müsli, das Mehl und den Zucker in einer Schüssel zusammenmischen und die gewürfelte Butter dazugeben. Zwischen den Fingern bröckeln.
Die Streusel auf das Obst streuen und für 30 Minuten in den Backofen zurücktun.
